Beet root halwa/ mixed fruits and beetroot halwa is easy to prepare and healthy dessert. the choice of fruits in this halwa is of your choice. I have used apple, banana and grapes with beetroot. Any fruits can be used. Finely chop them or almost smash them. Choose only fully ripe fruits as it makes halwa more tasty.

Instructions:

  1. Grate 2 beetroots, Chop 1 banana,Chop 1 apple, Slice few seedless grapes and keep it ready. I have used seedless  green grapes and sliced them finely. Few chops/bites of fruits you get in between is good. So while chopping the fruits make sure its not too big nor too small.
  2. Fry chopped cashew in ghee and keep aside.
  3. Cook beetroot first in the same pan with little ghee. Close and cook. Add little water if required. Cook until beet is done and add sugar. Color changes to dark red and leaves out water. Mix well and let it cook in simmer for a min until excess water leaves out. add more sugar if you want more sweetness. You can even add some jaggery powder instead of sugar but the taste will absolutely be different.
  4. Now add chopped fruits and fried cashew.
  5. Add cardamom powder/ rose essence. But it is optional. Vanilla essence also can be added. adding cardamom /essence depends on the flavor you like. You can skip this step and just serve the cooked beet and fruits topped with cashew.
