Olan is a traditional Kerala dish and inevitable item in Onam Sadhya. Here is the recipe for the special olan. This is best tasted when cooked in clay pot using coconut oil to get that authentic traditional flavor. It is cooked either with brown peas or long beans.
all you need is,
Heat the clay pot. Add thin diced cut pumpkin and long beans, Add water which is necessary to cook the above ingredients (water should not be too much or less). Add salt to taste. Close it with a lid and bring the flame to low. Cook it nearly for 10 to 15 minutes. Smash the cooked items with a spoon and mix it well. Do not smash too much, let the chunks be there in curry. Add coconut milk and coconut oil, Mix well and Garnish with curry leaves. Serve the olan hot !
