Slightly roast the Rava for a couple of minutes or until Rava starts to slightly change its color. Keep it aside.
Heat Ghee+Oil mix in a Nonstick Pan, crackle mustard seeds, urad dal and chana dal.
Once dal changes its color, add curry leaves, chopped ginger finely chopped onions, finely chopped green chilies, capsicum, peas and fry for a couple of minutes.
Then put in carrots and any other vegetable of your choice. Water to be added is 1:2 ratio. So, add water accordingly and add salt. Salt check: Taste the water and it should be slightly on the saltier side.
Close and cook on the medium flame until the vegetables are cooked. Approximately for 4- 5 minutes.
Reduce the flame to low and add the roasted rava. Mix well and again close and cook for a minute. Open and mix well again. Lastly add little Milk and mix again.
Put in finely chopped coriander leaves and serve Hot with coconut chutney and sambar.
