Cheera Mutta Upperi or Red spinach and Egg stir fry  is an combination of amaranthus (Red spinach) and eggs. I had this red spinach grow in my garden. It was so fresh and appealing that i wanted to cook it more tastier than usual that my H finishes it off just like that. 😉 So tried this recipe with egg and it was successful. For those who want to know what is upperi – “Upperi” in malayalam is nothing but stir fry side dish for rice just like porial in tamil.

Pictorial Directions for Cheera Mutta Upperi:

  1. Heat oil, splutter mustard seeds, urad dal and chana dal.
  2. Add the Onions, chopped garlic and saute until onions turn pink
  3. Put in chopped spinach with salt, turmeric powder, chilli powder and sambar powder. Though adding sambar powder is optional, I like adding it for that makes pairing side dish for sambar and rice.
  4. Mix well and close and cook in medium flame. Moisture from the spinach comes out. Once spinach is half cooked, Break and egg on top. Mix well and sprinkle water and close it again. Let the eggs cook along with spinach. After 5 minutes time, Open and let it dry to become bhurji as in final pic.

     

    Note: I have used the mud pot here to get that authentic taste. But you can cook in any other kadai.

    Ingredients

    • 1/4 tsp mustard seeds
    • 1/2 tsp urad dal
    • 1/2 tsp chana dal
    • 3 tbsp chopped onions
    • 1 tsp chopped garlic
    • 2 cups tightly packed chopped spinach red spinach (Red amaranth)
    • 1/4 tsp turmeric powder
    • 1/2 tsp chilli powder
    • 1/4 tsp sambar powder
    • 1 large egg
    • Salt as required

    Instructions
