Ingredients

  • 1 tbsp oil
  • 1 tsp garlic - chopped
  • 1/2 tsp green chilli - chopped
  • 1/8 cup onion - chopped
  • 6 tbsp bell peppers - green, yellow, red (2 tbsp each)
  • 1/4 tsp mixed herbs
  • 1/4 tsp pepper powder
  • 1/8 cup cashew paste
  • salt to taste
  • 1.5 cups cooked basmati rice

Instructions

  • heat oil in a pan and add chopped garlic and chopped green chillies and also chopped onions. 
  • fry until brown and then add all the three colors of chopped bell peppers.
  • fry for a minute and then add mixed herbs, pepper powder and cashew paste. mix well. need not fry for long. just sprinkle little water if it is scorching to the bottom.
  • add enough salt for the vegetables and rice. cook the basmati rice before hand. Rice has to be non sticky and just cooked and not over cooked. add the rice and mix it up well and gently.
  • serve the capsicum pulao hot with sauce
