cut the idlis to cubes and deep fry it in medium hot oil until crisp and brown. take it to a paper towel.
heat oil in a pan and pop in mustard seeds, chopped ginger, chopped garlic, chopped green chillies and fry for 2-3 seconds,
add onions, bell peppers and fry until onions are transparent.
further add tomatoes, broccoli, cabbage, beetroot along with turmeric powder, chilli powder, coriander powder and garam masala.
mix well, add water and let the vegetables cook until soft.
mash it slightly and then add the fried idlis into it.
mix well and cook for 2-3 minutes.
lastly add chopped coriander leaves and mix again.
serve hot with raita.
