Ingredients

  • 1 cup seeraga samba rice
  • 3 tbsp oil
  • 1.5 tbsp ghee
  • 1 inch cinnamon
  • 3 no cloves
  • 2 no cardamom
  • 2 no bay leaves
  • 1 tsp fennel seeds
  • 3 medium onion - chopped
  • 3 no green chilli - slit
  • 1 large tomato - chopped
  • 2 tbsp ginger garlic crushed
  • 3 tbsp coriander leaves
  • 3 cups mixed vegetables - chopped
  • 1.5 cups thin coconut milk
  • 1/4 tsp turmeric powder
  • salt to taste

Instructions

  • wash and soak seeraga samba rice in water for 10-15 minutes. 
  • heat oil + ghee in a pan and add cinnamon, cloves, cardamom, bay leaves, stone flower. fry till aroma arises.
  • add green chillies, chopped onions, mint leaves and fry until brown.
  • add ginger garlic paste and fry till raw smell goes off.
  • wash and chop mixed vegetables and add it to pan. fry for a minute. i have used carrots, peas, cauliflower and potatoes.
  • i have used chopped tomatoes and fry till mushy.
  • close and cook for 10 minutes. open and mix once.
  • add chopped coriander leaves, 1.5 cups coconut milk. drain and add the soaked rice, salt.
  • also add turmeric powder and mix well. let it come to a boil first. then, close and cook in simmer for 10 minutes.
  • open and mix it up. serve hot with raita or salna.
