Bitter gourd potato fry recipe

- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2 cups bittergourd - chopped or cut lengthwise
- 1 large potato - chopped or cut lengthwise
- 3/4 tsp salt
- 5 cloves garlic - crushed
- 1/2 tsp turmeric powder
- 1 large onion - thinly sliced
- 1 tsp chilli powder
- 1 tsp jaggery water
Heat oil and crackle mustard seeds and urad dal.
when it pops, add bittergourd, potatoes, garlic, salt and turmeric powder. Mix well.
sprinkle little water, close cook for 5 minutes.
open and add sliced onions, chilli powder and mix well.
fry in simmer until roasted. keep stirring in between.
lastly, add jaggery water and give it a mix.
serve hot with rice and curry.
