  • 1/4 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp chana dal
  • 3 tbsp chopped onions
  • 1 tsp chopped garlic
  • 2 cups tightly packed chopped spinach - red spinach (Red amaranth)
  • 1/4 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1/4 tsp sambar powder
  • 1 large egg
  • Salt - as required


  • Heat oil, splutter mustard seeds, urad dal and chana dal.
  • Add the Onions, chopped garlic and saute until onions turn pink
  • Put in chopped spinach with salt, turmeric powder, chilli powder and sambar powder.
  • Mix well and close and cook in medium flame. Moisture from the spinach comes out. Once spinach is half cooked, Break and egg on top. Mix well and sprinkle water and close it again. Let the eggs cook along with spinach. After 5 minutes time, Open and let it dry to become bhurji.
