So I tried making this Paneer Dynamite at home one evening when guests dropped by, and it was an instant hit. It’s crunchy, saucy and just perfect with some lettuce and a chilled drink.

This recipe is also perfect if you have leftover paneer and don’t want to do the usual curry. Trust me, once you try it, this might become your go-to evening snack or to impress your guests and kid.

Paneer

Maida, Cornflour, Bread Crumbs
These make the coating super crispy. Don’t skip breadcrumbs—it gives the perfect café texture. You can use rice flour instead of maida if you want it gluten-free.

Mayonnaise & Sauces
Use plain mayo and add your own flavours. You can also use vegan mayo if preferred. Tomato sauce gives sweetness, chilli sauce adds heat, and grated garlic makes it zingy!

Step-by-step Instructions with Photo Guide

• Take 100 gms paneer and cut into triangle-shaped bite-sized pieces
• Add a pinch of ginger garlic paste, 3/4 tsp red chilli powder,

1/4 tsp salt, 1/4 tsp soya sauce

and a pinch of oregano and Mix well


• Add 1.5 tbsp maida, 1 tbsp corn flour, 2 tbsp bread crumbs. mix once to coat it with the paneer


• Do not add water at once. Just sprinkle a few drops and mix slowly until everything coats the paneer evenly


• Heat oil in a kadai. Deep fry paneer in batches till golden and crisp
• Drain on a paper towel

For the coating
• In a bowl, mix 2 tbsp mayonnaise, 1 grated garlic clove, a pinch of chilli powder,

1/4 tsp chilli sauce, 1 tsp tomato sauce
• Mix well


• Toss the fried paneer in this sauce


• Serve in a bowl lined with lettuce leaves
• Top with chopped onions if you like

• Always fry paneer on medium heat to avoid burning the coating
• Don’t add too much water to the batter, just enough to bind
• You can prep the coating sauce ahead and chill it
• Paneer can be air-fried but frying gives best texture
• Use Kashmiri chilli powder for colour and less heat

Yes, tofu works well. Just press out excess water first.

Ingredients

  • Add water little by little till paneer is coated
  • Deep fry till golden
  • Mix all sauce ingredients
  • Toss paneer in sauce
  • Serve hot on lettuce with chopped onions
