Butter corn:

boil water in a pan and add sweet corn and salt to it. let it come to a rolling boil or until sweet corn is soft. another method of finding if the corn is done is it floats to the top once cooked.

strain the water and let it cool. add pepper powder, melted butter and mix well. butter corn is ready.

beetroot ghee rice:

Cook rice before hand, cool it and keep it ready. heat oil/ghee in a pan and pop in mustard seeds, chopped garlic, cumin seeds, chopped onions and fry until slightly brown.

add grated beetroot, chopped curry leaves, chopped coriander leaves, chilli powder, salt and turmeric powder. mix well.

add 1/4 cup water and let it cooked in simmer until all the water is gone. at this stage, add rice and mix gently. 

lastly add ghee and give it a mix. pack the lunch box !

Butter corn recipe

Ingredients

  • 2 cups water
  • 1/8 cup sweet corn
  • salt to taste
  • 1 pinch pepper powder
  • 1/8 tsp melted butter

Instructions

  • boil water and add sweet corn and salt. let it cook until soft. 
  • strain and cool it completely. mix along with pepper powder and melted butter.

Beetroot ghee rice recipe

Servings: 1 cups

Ingredients

  • 2 tsp oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1 tsp chopped garlic
  • 2 tbsp chopped onions
  • 4 tbsp grated beetroots
  • 1 tbsp chopped coriander leaves
  • salt to taste
  • 1/8 tsp turmeric powder
  • 1/8 tsp chilli powder
  • 1 pinch garam masala
  • 1/4 cup water
  • 1 cup cooked rice
  • 1 tsp ghee

Instructions

  • heat oil in a pan and pop in mustard seeds and cumin seeds. 
  • fry chopped garlic, chopped onions, until slightly brown
  • further add chopped coriander leaves, salt, chilli powder, garam masala and mix well. 
  • add water and let it cooked until it gets dried up. 
  • lastly add cooked rice and ghee and fluff it up gently.
