Pumpkin sambar recipe with step by step pictorial.

Sambar known also as sambhar is a lentil based curry cooked along with vegetable and tamarind extract. Any south Indian cannot live without it! May be an exaggeration, but it is the truth.

Even if your a follower of salads only diet, there could be a day when you badly wanted the sambar and crispy dosa? No south Indian can break up with Sambar.  🙂

There are so many variations of it in south India. Each Kitchen has its own special recipe.

Ingredients

  • 3/4 cup tur dal
  • 1/4 cup coconut pieces
  • 2 tbsp sambar masala adjust according to its spice level
  • 1 tsp mustard seeds
  • 1 no green chilli
  • 1/8 tsp asafoetida
  • 2 medium onions chopped roughly
  • 1 medium tomato chopped roughly
  • 1 spring curry leaves
  • 2 cups white pumpkin chopped
  • 1/8 tsp turmeric powder
  • salt to taste

Instructions

  • Cook tur dal with enough water until it gets mashed. If in cooker, use 1 cup dal and 3 cups water and cook to 4 whistles.
  • Heat 1/2 tbsp oil and roast the coconut pieces/grated coconut in simmer until reddish brown.
  • Switch off and and sambar powder to it and mix well.
  • Grind it to a smooth paste and keep it ready.
  • Splutter mustard seeds, Green chilly and asafoetida. Fry for a minute
  • add chopped onions, curry leaves and fry until brown
  • once its brown, add the tomatoes and fry for a minute.
  • Add the chopped vegetable(white pumpkin) , salt and turmeric powder. Mix well

  • Pour little water and close and cook until vegetables are almost done.
  • Now add the cooked dal and tamarind extract. boil for 5 more minutes in medium flame.
  • Add the ground masala.Close and cook until it boils
