firstly scramble idlis and keep it aside. IF using fresh idlis, let i cool completely and then crumble it. heat oil in a pan and pop in mustard seeds, urad dal, chana dal, green chillies, cashews and fry for half a minute.
followed by chopped onions. fry onion until transparent.
add the vegetables to onions and add salt. fry for 1-2 minutes.
add turmeric powder, spicy idli podi and mix well.
add water and let it cook in simmer until all the water dries out. by this time, vegetables would have cooked.
further add crumbled idlis and mix well.
lastly add chopped coriander leaves and mix again. serve hot!
