firstly scramble idlis and keep it aside. IF using fresh idlis, let i cool completely and then crumble it. heat oil in a pan and pop in mustard seeds, urad dal, chana dal, green chillies, cashews and fry for half a minute.

boil peas separately for 5 minutes in boiling water. grate the carrots, finely chop beans and baby corn. slice mushrooms and keep it ready well before starting. add the vegetables to onions and add salt. fry for 1-2 minutes.

Ingredients

  • 7 cooked idlis
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tbsp chana dal
  • 1 tsp urad dal
  • 1 sprig curry leaves
  • 2 nos green chilli slit
  • 2 tbsp cashews
  • 2 medium onion finely chopped
  • 3 tbsp cooked peas
  • 2 nos babycorn chopped
  • 4-5 no mushrooms sliced
  • 3 tbsp beans finely chopped
  • 3 tbsp carrot grated
  • saly to taste
  • 1/4 tsp turmeric powder
  • 1/4 tsp idli podi
  • 2 tbsp coriander leaves chopped
