take a thick bottomed vessel and put in onions, potatoes, carrots, beans, peas, green chillies, curry leaves, cinnamon, cloves, cardamom, salt, ginger and turmeric powder all together.
add little water just enough for the vegetables to get cooked.
mix well close and cook until the vegetables are soft.
open and switch off. after 2 minutes, add thin coconut milk, mash slightly.
further add cashew paste and mix well.
let it just heat up but do not boil.
switch off when it slightly gets heated up.
add thick coconut milk, curry leaves and coconut oil.
do not cook further. mix well and close immediately to set the flavors in.
serve hot with appam or idlis or dosas.
