Ingredients

  • 1/2 cup onion - chopped
  • 1 large potato - diced
  • 1 large carrot - chopped
  • 1/8 cup beans - chopped
  • 3 tbsp peas
  • 3 nos green chilli slit
  • 1 spring curry leaves
  • 1 inch cinnamon stick
  • 2 nos cloves
  • 1 no cardamom
  • salt to taste
  • 1 tbsp ginger - chopped
  • 1/8 tsp turmeric powder
  • 1.5 cups thin coconut milk
  • 1 cup thick coconut milk
  • 2 tbsp cashew paste
  • 1 spring curry leaves
  • 1 tbsp coconut oil

Instructions

  • take a thick bottomed vessel and put in onions, potatoes, carrots, beans, peas, green chillies, curry leaves, cinnamon, cloves, cardamom, salt, ginger and turmeric powder all together. 
  • add little water just enough for the vegetables to get cooked. 
  • mix well close and cook until the vegetables are soft. 
  • open and switch off. after 2 minutes, add thin coconut milk, mash slightly. 
  • further add cashew paste and mix well. 
  • let it just heat up but do not boil. 
  • switch off when it slightly gets heated up. 
  • add thick coconut milk, curry leaves and coconut oil. 
  • do not cook further. mix well and close immediately to set the flavors in.
  • serve hot with appam or idlis or dosas.
