tamarind chutney
- 1 cup tamarind extract
- 1/2 cup jaggery powder
- 1/8 tsp salt
- 1/8 tsp chilli powder
- 1/8 tsp dry mango powder
- 1/8 tsp chaat masala
- 1/8 tsp cumin powder
- 1/8 tsp black salt
- 10 no dates - soaked and grind to paste
Green chutney
- 1 handful coriander leaves
- 1 handful mint leaves
- 2 no green chilli
- 5 nos garlic
- 1 inch ginger
- 1/4 tsp chaat masala
- 1/2 tsp cumin seeds
- 1/2 tsp salt
red chutney
- 10 no kashmiri red chillies
- 1/2 tsp cumin seeds
- 1/4 tsp salt
- 7-8 cloves garlic
- 1/8 tsp chaat masala
- 1 large squeeze lemon
tamarind chutney
Extract tamarind pulp from soaked tamarind and prepare a cup of extract.
Take the tamarind extract in a pan along with jaggery powder, salt, chilli powder, chaat masala, dry mango powder, cumin powder and black salt.
mix well and cook for a minute.
add dates puree and cook further until saucy consistency is reached. Coo kin medium heat while stirring continuously. Tamarind chutney is ready
