How to make Chutneys for Chaat – three simple chutneys that are basically used in many Indian street foods like sev puri, pani puri, masala puri, bhel puri, ragda, cutlet chaat etc.,

How to make chaat chutney?

Three chutney types that are generally prepared are pudina chutney, sweet tamarind chutney and red chilli garlic chutney. We will be looking at all the three chaat chutney varieties here in video recipe and step by step pics.

  1. tamarind chutney – also called as imli chutney or sweet chutney
  2. Green chutney – also called hare chutney or coriander mint chutney
  3. Red chutney – also called as lal chutney or lasun ki chutney or red chilli garlic chutney.

While the red chutney is spicy one and used in very little amount, imli and green chutney are used in most of the chaat items.

How to make Chutneys for Chaat

1. Tamarind dates chutney recipe | Meeti imli chutney

soak 2 lemon sized tamarind in 1 cups hot water. squeeze out the tamarind extract, filter and keep it ready. Take the tamarind extract in a pan and add jaggery and salt. Since we will be adding dates paste, add jaggery accordingly.

further add chilli powder, dry mango powder, chaat masala, cumin powder, black salt, mix well. cook for a minute on high heat.

Meanwhile, grind 10 dates to a paste (seedless or seeds removed) If it is too hard, soak it in water for 15 minutes before grinding. Add the dates paste to the pan.

Mix well and cook in medium heat until you reach the desired saucy consistency.

serve it cool or use in chaat. can be stored in air tight container refrigerated for about 1-2 weeks.

2. Green chutney recipe | Mint coriander chutney for chaat

Grind together mint leaves, coriander leaves, green chilli, garlic, ginger, chaat masala, cumin seeds, salt.

add a little water and grind everything to a fine paste. Green chutney is ready. some prefer adding gram dal to this, some add lemon juice to it. it is optional.

Use it fresh in chaats.

Red chutney recipe | Garlic red chilli chutney for chaat

Soak the kashmiri chillies in hot water for about 30 minutes. take it in a blender and add little water used for soaking.

further add cumin seeds, salt, garlic,

chaat masala, lemon juice is also added.

Grind it to a fine paste and serve fresh/ use in chaats.

Ingredients

tamarind chutney

  • 1 cup tamarind extract
  • 1/2 cup jaggery powder
  • 1/8 tsp salt
  • 1/8 tsp chilli powder
  • 1/8 tsp dry mango powder
  • 1/8 tsp chaat masala
  • 1/8 tsp cumin powder
  • 1/8 tsp black salt
  • 10 no dates soaked and grind to paste

Green chutney

  • 1 handful coriander leaves
  • 1 handful mint leaves
  • 2 no green chilli
  • 5 nos garlic
  • 1 inch ginger
  • 1/4 tsp chaat masala
  • 1/2 tsp cumin seeds
  • 1/2 tsp salt

red chutney

  • 10 no kashmiri red chillies
  • 1/2 tsp cumin seeds
  • 1/4 tsp salt
  • 7-8 cloves garlic
  • 1/8 tsp chaat masala
  • 1 large squeeze lemon

Instructions

  • Extract tamarind pulp from soaked tamarind and prepare a cup of extract.
  • Take the tamarind extract in a pan along with jaggery powder, salt, chilli powder, chaat masala, dry mango powder, cumin powder and black salt.
  • mix well and cook for a minute.
  • add dates puree and cook further until saucy consistency is reached. Coo kin medium heat while stirring continuously. Tamarind chutney is ready

green chutney

  • Grind everything given under "green chutney" in ingredients to a fine paste adding very little water.
  • serve the chutney fresh/ use in chaat

red chutney

  • Grind everything given under "red chutney" in ingredients to a fine paste adding very little water.
  • serve the chutney fresh/ use in chaat
