soak basmati rice in water for 15 minutes.
heat oil and saute all ingredients for the vangi bath masala powder except coconut.
when the spices are slightly turning brown, add coconut and fry till reddish brown
transfer to a blender and grind to powder.
heat ghee + oil in a cooker, add bay leaf, cumin seeds, mustard seeds and crackle them.
when it crackles add chopped onion, green chilli, curry leaves anf fry till onions are transparent.
add 3-4 cloves garlic, brinjal sliced, turmeric powder and fry for a minute on high heat.
now add soaked basmati rice, prepared masala and fry for half a minute.
add water (1.25 cups for 1 cup rice) , salt, ghee and mix well. close and pressure cook for 10 minutes on low flame.
when the pressure settles down, open and fluff it up gently.
serve hot with raita.
