Easy Kerala Style Wine Christmas Cake
Small batch moist Christmas cake made with wine-soaked fruits and caramel

- 2 tbsp chopped dates
- 2 tbsp chopped anjeer
- 1 tbsp golden grapes
- 2 tbsp black grapes
- 5-6 chopped cashews
- 6-7 chopped almonds
- 4-5 dried raspberries
- 1/2 cup non-alcoholic wine
- 1/2 cup + 1/3 cup brown sugar
- 2 tbsp water
- 1/2 tbsp clove powder
- 2 eggs
- 1/2 tsp vanilla essence
- 1/2 cup melted butter
- 1 cup maida
- 1 tsp baking powder
- 1/4 tsp baking soda
- pinch salt
Soak chopped dry fruits in wine for 2 hours
Caramelize sugar and mix soaked fruits and clove powder
Blend eggs, vanilla, sugar, butter for wet mix
Add fruit mix into wet mix
Sift dry ingredients and fold into wet mix
Pour into greased tin and top with fruits
Bake at 180°C for 45 mins and 160°C for 10 mins
Cool fully, demould, slice and enjoy
