This dish is a family favorite, especially during weekends when we crave something hearty yet quick to make. The first time I made this upma, it was a rainy Saturday, and we had leftover bread that needed to be used up. I decided to experiment a bit and combined the bread with chicken and eggs, seasoned with Indian spices. The result was a comforting, spicy upma that became an instant hit. Every bite brings back memories of cozy family brunches. It’s a perfect recipe to try when you want something different from the usual breakfast or dinner options.

Recipe Ingredients

For Marination:

  • 200 gms boneless chicken, chopped
  • 1/2 tsp salt
  • 1/4 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1/2 tsp coriander powder
  • 1/8 tsp pepper powder
  • 1/2 tsp garam masala
  • 3/4 tsp ginger garlic paste

For Cooking:

  • 1 tbsp oil (for frying chicken)
  • 2 eggs
  • Pinch of salt (for eggs)
  • 1/8 tsp chilli powder (for eggs)
  • 1/2 tsp oil (for frying eggs)
  • 1 green chilli, chopped
  • 1 spring curry leaves
  • 1 onion, chopped
  • 1/2 tsp ginger garlic paste
  • 1/8 cup capsicum, chopped
  • 1/2 tomato, chopped
  • 1/2 tsp salt (for masala)
  • 1/2 tsp chilli powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp coriander powder
  • 1/8 tsp garam masala
  • Pinch of pepper powder
  • 1 tsp tomato sauce
  • Water (as required)
  • 4-5 slices of bread, chopped
  • Chopped coriander leaves

Recipe Instructions

Marination:

  • Combine boneless chicken with salt, turmeric powder, chilli powder, coriander powder, pepper powder, garam masala, and ginger garlic paste. Allow it to marinate for 30 minutes.

Cooking:

  • Heat oil in a pan over medium heat.
  • Fry the marinated chicken until cooked. Set aside.
  • Push the chicken to the sides of the pan.
  • Crack eggs into the centre, season with salt and chilli powder, scramble, and integrate with the chicken. Cook briefly and transfer to a plate.
  • In the same pan, heat additional oil.
  • Sauté green chilli and curry leaves for half a minute.
  • Fry onion until translucent.
  • Incorporate ginger garlic paste and cook until fragrant.
  • Add capsicum and stir-fry for a minute.
  • add tomato, along with salt, chilli powder, turmeric powder, coriander powder, garam masala, and pepper powder. Sauté until aromatic.
  • Pour in tomato sauce and water, bring to a boil, and cook until tomatoes break down.
  • Mix in bread pieces, ensuring they are well coated with the masala.
  • put in the cooked chicken and scrambled eggs to the pan, stir to combine.
  • Garnish with chopped coriander leaves.
  • Serve hot and enjoy.

mix and marinate for 30 minutes

cook until done. takes 10-15 minutes.

move it to the sides and make space in the centre.

break 3 eggs in the centre and add salt and chilli powder.

scramble the eggs without mixing it with chicken pieces on the sides.

mix the scrambled eggs with the chicken and cook it together for on more minute on a high heat.

transfer it to a plate. keep it aside until use.

heat oil in the same pan

add chopped green chillies and curry leaves

quickly saute and add chopped onions

fry until translucent.

add ginger garlic paste.

fry for a minute until raw smell leaves.

add chopped tomatoes

add salt and fry for a couple of minutes.

tomatoes need not be mushy.

add in all the spice powders and give a quick mix.

add tomato sauce

also add water for the vegetables to get cooked.

mix and cook for a couple of minutes.

cook until thick

add the chopped bread pieces

stir until well coated with masala.

add the cooked chicken and egg scramble and mix well.

cook for 2-3 minutes until the flavours get blended

lastly add chopped coriander leaves

mix and give it a final stir

serve it hot and fresh.

  • This recipe has green chilli, red chilli powder and pepper for the spice. Adjust spices to dominate pepper or chilli flavour that will suit your taste.
  • Enhance with additional vegetables like carrots, corn, peas if desired.
  • Opt for whole wheat or brown bread instead of white for added nutrition.

  • Dice chicken finely for quicker cooking.
