For the Stir Fry:

  • 3 cups cauliflower, chopped
  • Potatoes, peeled and chopped
  • 1 tsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp cumin seeds
  • 1/2 finely chopped onion
  • 1 tbsp crushed ginger-garlic
  • 1/4 tsp turmeric powder
  • 1 tsp chilli powder
  • Salt to taste
  • 1 cup water
  • 1/2 tbsp sambar powder
  • 1 sprig curry leaves
  • Oil (as needed for roasting)


  1. Preparation: Heat 1 tsp of oil in a kadai (pan). Add mustard seeds, urad dal, and cumin seeds. Allow them to splutter.
  2. Aromatics: Add finely chopped onions and crushed ginger-garlic to the pan. Fry for a minute or until the raw smell disappears.
  3. Vegetable Mix: Incorporate the cauliflower and potato into the pan. Sprinkle salt, turmeric powder (1/4 tsp), and chilli powder (1 tsp). Mix the vegetables well to coat them with the spices.
  4. Cooking Process: Pour in 1 cup of water, cover the pan, and let the vegetables cook until they become soft. Once cooked, uncover and allow the excess water to evaporate.
  5. Flavor Infusion: Add sambar powder (1/2 tbsp) and a sprig of curry leaves to the mixture. Mix well and continue cooking on low flame until the vegetables are well-roasted. If needed, add a little oil for extra richness.
  6. Serving: Serve the Cauliflower Potato Fry hot with rice and your choice of curry, creating a wholesome and delightful meal.
