Ingredients:

  • 1 tsp oil
  • 1 tsp mustard seeds
  • 3/4 tsp urad dal
  • 1/2 tsp cumin seeds
  • Fenugreek seeds (a few)
  • 2 broken red chillies
  • 2 green chillies (slit)
  • 1 spring curry leaves
  • 2 garlic cloves (chopped)
  • 1 onion (finely chopped)
  • 1 tomato (chopped)
  • 1 tsp salt
  • 1 ridge gourd (chopped into cubes)
  • 1/4 tsp turmeric powder
  • 1 tbsp tamarind paste
  • 1.5 cups water
  • 2 tsp kulambu milagai podi (spice mix)
  • Chopped coriander leaves

Instructions:

  1. Tempering Aromatics:
    • Heat 1 tsp oil in a mud pot.
    • Add 1 tsp mustard seeds. When they splutter, add 3/4 tsp urad dal, 1/2 tsp cumin seeds, fenugreek seeds, 2 broken red chillies, 2 slit green chillies, and a spring of curry leaves.
    • Mix everything and sauté for a few seconds.
  2. Sautéing Vegetables:
    • Add 2 chopped garlic cloves and fry for a minute.
    • Introduce 1 finely chopped onion and fry until it softens.
    • Add 1 chopped tomato and cook until it becomes mushy.
  3. Cooking Ridge Gourd:
    • Sprinkle 1 tsp salt, mix, and cook until the mixture becomes mushy.
    • Add 1 chopped ridge gourd, 1/4 tsp turmeric powder, and cook for a minute.
    • Pour in 1 tbsp tamarind paste and 1.5 cups of water.
    • Mix everything, close the pot, and cook for 10-15 minutes.
  4. Adding Spice Mix:
    • Open the pot and add 2 tsp kulambu milagai podi.
    • Mash everything together and let it cook for another 5 minutes.
  5. Finishing Touch:
    • Add chopped coriander leaves and mix well.
  6. Serve and Enjoy:
    • Your delicious, healthy, and tasty Peerkangai Kadayal is ready.
