Soya Chunks Roast recipe is filled with aromatic spices and rich textures, this dish is one of the popular recipe of Kerala. It is a semi dry started dominated with pepper flavour and dark look make it look and feel like a non veg pepper fry and it tastes very similar to chicken fry.

Ingredients:

For Preparing Soya Chunks:

  • 2 cups water
  • Salt to taste
  • 1.5 cups soya chunks

For Roasting:

  • 1 tbsp oil
  • 1 tsp fennel seeds
  • 1/2 inch cinnamon
  • 2 cloves
  • 2 onions, finely chopped
  • 2 tsp ginger-garlic-green chilli crush
  • 1 tomato, finely chopped
  • Hot water (as needed)
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp pepper powder
  • 1 tsp Kashmiri chilli powder
  • 1/2 tsp garam masala
  • Salt to taste

For Garnish:

  • Chopped coriander leaves
  • 1/4 tsp pepper powder

For Tadka:

  • 1 tbsp coconut oil
  • 1 sprig curry leaves

Instructions:

  1. Prepare Soya Chunks:
    • In a pan, heat 2 cups water with salt and add 1.5 cups soya chunks.
    • Once soft, squeeze excess water and tear them into halves.
  2. Sauté Aromatics:
    • Heat 1 tbsp oil in a pan and add fennel seeds, cinnamon, cloves, and finely chopped onions.
    • Fry until brown and add ginger-garlic-green chilli crush. Fry until the raw smell dissipates.
  3. Cook Tomatoes and Spices:
    • Add finely chopped tomatoes and cook until mushy.
    • Add hot water intermittently to prevent scorching.
    • Mix in turmeric powder, coriander powder, cumin powder, pepper powder, Kashmiri chilli powder, and garam masala.
    • Add hot water again to combine everything. Cook until the raw smell leaves.
  4. Cook it with Soya chunks:
    • Add 1/4 cup hot water, close, and cook for 5 minutes.
    • Open, mix, and add prepared soya chunks and salt. Combine everything until the masala coats the soya.
  5. Final Touch:
    • Add 1/8 cup hot water, mix, and close. Cook for 2-3 minutes on medium heat.
    • Open, add chopped coriander leaves and 1/4 tsp pepper powder. Mix well.
  6. Tadka Magic:
    • In a tadka pan, heat 1 tbsp coconut oil, add a sprig of curry leaves. Once crisp, add the tadka to the soya fry and mix.
  7. Rest and Serve:
    • Close and let it rest for a few minutes before serving.

The tadka of coconut oil and curry leaves adds the perfect finishing touch to this dish. so dont skip it.
