Ingredients:

  • 2 cups red poha
  • 2 tbsp ghee
  • 2 tbsp cashews
  • 2 tsp dry grapes
  • 1/4 cup milk
  • 1/4 cup moong dal – cooked and mashed
  • 3/4 cup jaggery
  • 1/8 cup grated coconut
  • 1 tsp ghee to add at last

Instructions:

  1. Begin by washing 2 cups of red poha thoroughly under running water.
  2. In a pan, heat 2 tsp of ghee. Fry 2 tbsp of cashews for half a minute, then add 2 tsp of dry grapes. Fry until plump, transfer to a bowl, and set aside.
  3. In the same pan, add the washed red poha and 1/4 cup of milk to the remaining ghee. Mix until a lump-free consistency is achieved.
  4. Pre-cook 1/4 cup of moong dal mash and set it aside.
  5. Once the poha is mixed well, add the mashed moong dal, ensuring thorough incorporation.
  6. In another pan, melt 3/4 cup of jaggery with a little water until completely dissolved. Strain and add it to the poha mixture. Mix until evenly blended and free of lumps.
  7. Introduce the fried nuts, 1/8 cup of grated coconut, and mix well. Cook for an additional minute.
  8. Before serving, add 1 tsp of ghee and mix again. Adjust the ghee quantity according to your preference for stickiness and greasiness.

This red poha sweet pongal offers a healthy twist to your regular sweet/dessert recipes. The thin variety of red poha is recommended for this dish. If using thick poha, ensure to wash it two or three times to achieve a soft texture.
