Veg Fried rice – Street food style

Veg Fried rice is easy, tasty and one of the most popular Indian street food as well. They make it so simple throwing in all the ingredients into cooked rice,add some sauces and give it a toss and there the yummy fried rice is ready. Only thing is it takes time to chop all the vegetables finely. It needs to be chopped very finely only then the fried rice looks appealing:). I had all the vegetables in stock, so i tried the street food style saucy, pepper flavored fried rice 🙂

  1. Soak the Basmati rice and cook them until done. I have not pressure cooked the rice instead cooked in boiling water so that the texture can be checked and stopped at exact point in time. Bring a bowl of water to rolling boil and put in the soaked basmati rice into it along with salt and a tsp of oil. Oil is added to avoid making it sticky. Filter and spread the rice in a plate to cool in completely before tossing with vegetables. It is important step to cool it down completely or else it becomes sticky and gets mashed when you mix it.

  2. Heat oil, crackle cumin seeds, throw in chopped onions, ginger and garlic. saute until onions are pink. Need not fry the onions till brown. Now put in all the chopped vegetables along with chopped paneer. Here i have added carrot, beans, cabbage(must), green chilli, capsicum, spring onions and paneer. Choice of vegetables are up to you.

  3. Close and cook until veggies are almost done. let the slight crunchiness retain don’t overcook it until mushy. When the veggies are cooked. Add salt, pepper powder and mix well. Now to this, we can toss in cooked rice, soya sauce and chilli sauce. Toss it and adjust salt. There you go!.. 🙂 Street food style fried rice is ready!

Ingredients

To cook rice

  • 1-1.5 cups basmati rice
  • 1 tsp oil

Sauteing Vegetables

  • 1 tsp cumin seeds
  • 1 large onion finely chopped
  • 2 inch ginger finely chopped
  • 5-6 cloves garlic finely chopped
  • 1/2 large carrot finely chopped
  • 2 long-french beans finely chopped
  • 1/4 cup cabbage chopped
  • 1 long green chilli finely chopped
  • 1/2 large capsicum finely chopped
  • 2 tbsp spring onions finely chopped
  • 1/4 cup paneer finely chopped
  • 3/4 tsp pepper powder
  • 1/4 tsp soya sauce
  • 3/4 tsp tomato-chilli sauce
  • Salt As per taste

Instructions

  • Soak the Basmati rice for 30 min. Bring a bowl of water to rolling boil and put in the soaked basmati rice into it along with salt and a tsp of oil.  When done, Strain and spread the rice in a plate to cool in completely before tossing with vegetables.
