How to make pepper chicken recipe Kerala style also known as chicken peralan or chicken kurumilagu peratiyathu is a dry recipe where chicken is coated with pepper masala base and dried/roasted.

this is also called as varatiyathu as we let it to cook in simmer until dry and roasted. we usually cook the chicken pepper fry (nadan chicken peralan) but during my recent visit to ernakulam, it had a twist of roasted coconut topped over and that flavour was just taking the dish a step higher.

chicken pepper fry  is moderately spiced and hot. you can add more chilli powder if you want it more spicy. if you like it to be semi gravy, then stop it without drying it up.

Ingredients

  • 2 tbsp oil
  • 1 tsp fennel seeds
  • 1 no green chilli chopped
  • 1 sprig curry leaves
  • 2.5 tbsp ginger garlic crushed
  • 1.5 cups small onions sliced
  • 1 large tomato chopped
  • 1 kg chicken
  • 1/4 tsp turmeric powder
  • 2 tbsp coriander powder
  • 1.5 tbsp pepper powder
  • salt to taste
  • 2 tsp garam masala
  • 1 tbsp pepper powder

to roast

  • 1 tbsp coconut oil
  • 1 sprig curry leaves
  • 3/4 cup coconut grated
  • 1 tbsp pepper powder

Instructions

  • heat oil and add fennel seeds, green chilli chopped, curry leaves, ginger garlic crushed, onions sliced. fry until onions are brown. 
  • add chopped tomatoes and fry until mushy. 
  • further add chicken , turmeric powder, coriander powder, pepper powder and salt to taste. mix well.
  • close and cook for 15 minutes. 
  • open and add 1 cup water and close and cook again for 30 minutes until soft. 
  • open and add garam masala and pepper powder. mix well. 
  • in another pan, heat oil and fry grated coconut, curry leaves until slightly reddish. 
  • also add pepper powder and mix well.  fry for a minute. 
  • add it to the fry and mix well. 
  • cook in simmer for 5 minutes while mixing in between. 
  • serve hot with rice and curry.

1.heat oil and add cumin seeds, chopped green chilli, curry leaves and crushed ginger and garlic. further add sliced small onions and fry till brown.

2. add chopped tomatoes and fry till mushy.

3. when the tomatoes are mushy, add chicken, turmeric powder, coriander powder, salt and pepper powder. mix well.

4. close and cook for 15 minutes until the chicken leaves out water.

5. add 1 cup water and close again to cook for 30 minutes or until the chicken is soft.

6. further add garam masala, pepper powder and mix well. adding pepper powder is according to your taste.

7. heat oil and add curry leaves and grated coconut. fry for few minutes until slightly reddish.

8. lastly, add pepper powder and fry for few seconds.

9. add this fried coconut to the chicken and mix gently.

10. let it cook in simmer for 5-10 minutes until slightly roasted. mix once and serve hot !
