Am not that fond of fried rice. for some reason, am a kind of biryani girl! 🙂 but i recently tried this chicken fried rice at home and found it super hit! got extraordinary remarks that it is like a perfect restaurant like fried rice. I simple had to go through a lot of recipes to understand the basics of fried rice and finally got the niche perfect on my own recipe.
with very simple ingredients, this fried rice recipe with chicken is a easy to cook and a lunch box idea too. generally egg and vegetables are added along with chicken to make it more tastier. but that is optional.

Ingredients
to roast chicken strips
- 2 tbsp oil
- 1/4 cup chicken strips
- salt to taste
- 1/4 tsp pepper powder
to scramble egg
- 1 large egg
- salt to taste
- 1/8 tsp pepper powder
for fried rice
- 2 tbsp oil
- 1 no green chilli finely chopped
- 4 nos garlic finely chopped
- 3 tbsp spring onions finely chopped
- 1/8 cup capsicum finely chopped
- 1/8 cup carrots finely chopped
- 1 no onion finely chopped
- salt to taste
- 2 cups basmati rice cooked with salt
- 1 tsp soya sauce
- 1 tsp vinegar
- 1/4 tsp pepper powder
Instructions
to roast chicken strips
- heat oil and fry the chicken strips with salt and pepper powder. close and cook until chicken is tender and then open and fry the chicken pieces until roasted.
egg scramble
- take the chicken pieces in plate and in same pan, break an egg. add salt, pepper powder and scramble it. take it in the plate and keep aside until use.
for fried rice
- heat oil and add green chilli, garlic, spring onions, capsicum, carrots, onion, salt and fry for 2 minutes until the vegetables are half cooked.
- add 2 cups cooked basmati rice (rice has to be cooled down completely) , soya sauce, vinegar , pepper powder and mix well gently.
- serve hot with tomato sauce.

- rice has to be cooked and cooled down completely before adding.Â
- chicken can be pressure cooked and added or roasted in pan. make sure it is tender and roasted ones give extra flavour.Â
easy indo chinese chicken fried rice recipe
1.cut thin strips of the boneless chicken preferably chicken breast pieces. heat oil in a pan and add the chicken pieces to it. fry till it gets white on all sides.
2. add salt and pepper powder to taste.
3. mix well, close and cook for 10-15 minutes until the chicken is cooked. if needed sprinkle little water.
4. when it is completely cooked, soft and toasted, take in a plate to use later.
5. in the same pan, keeping the flame low, break an egg over. add salt and scramble it.
6. add pepper powder to taste, fry and take it in a plate. along with chicken to use later.
7. add chopped green chilli, chopped garlic, chopped spring onions, chopped onions, chopped carrots, chopped capsicum. add salt to taste. salt needed for the vegetables.
8. fry for 2 minutes in medium heat until well roasted. the vegetables have to be crunchy and not completely cooked.
9. at this stage, add the cooked chicken and egg and mix well.
10. basmati rice has to be cooked to perfect consistency with salt. cook it well before and let it cool completely before adding it to pan. it not be mashable or under cooked. the grains has to break easily if pressed. that is the right consistency. add soya sauce and vinegar.
11. mix well and lastly add pepper powder and mix gently.
12. serve hot with tomato sauce.
