This recipe is a simple stir fry with minimal spices. Ridge gourd skin stir fry is made with ridge gourd skin which we mostly throw away after peeling. It is said to have very good fibre strength in it.Ridge gourd skin stir fry

We can make chutneys, chutney podi and many more recipes with it. We cook peechenga vattichathu with the ridge gourd which is one of my most favorite and comforting dish for the rice.

Ridge Gourd skin stir fry pictorial Directions:

  • Peel the skin of ridge gourd. Wash them well and chop them finely.
  • Heat oil, crackle mustard seeds, saute shallots and drop in chopped skin.
  • Add turmeric powder, salt and chilli powder.
  • Mix well. Sprinkle little water and close for a minute or two and cook in simmer.
  • Open and let it dry in simmer while stirring in between.

Notes:

Adding curry leaves is optional.

Adding red chillies instead of red chilly powder is based on your preference.

Ingredients

  • 1 Cup Ridge gourd peel/skin tightly packed
  • 1/2 Tsp Mustard seeds
  • 1/4 Cup Shallots
  • 1/4 Tsp Turmeric powder
  • 1/2 Tsp Chilli powder
  • Salt To taste

Instructions
