Tofu Salad – Protein packed breakfast salad – healthy breakfast

Homemade Fresh Tofu Salad – a breakfast that promises health and comfort. It’s been almost two years since we shifted to a salad-based breakfast. We made sure to include plenty of vegetables along with a reduced intake of carbs, resulting in significant improvements in our health and lifestyle.

Since then, I’ve been experimenting with various salads, focusing particularly on Indian-based creations with a distinctive touch. The salad dressings I prefer is usually by their minimal or zero oil content, keeping in mind with our commitment to a healthier lifestyle.

Ingredients:

For Toasted Tofu:

  • 1/2 tsp oil
  • 200 gms tofu (cubed)
  • Pinch of salt
  • Pinch of paprika powder

For Dressing:

  • 2 cloves garlic (grated)
  • 1/8 tsp soya sauce
  • Juice of 1/2 lemon
  • 1/2 tsp vinegar
  • Few drops of honey
  • Large pinch of sesame seeds
  • Tiny pinch of paprika

For Salad:

  • 1 cup chopped lettuce
  • 1 carrot (julienne cut)
  • 1 cup shredded purple cabbage
  • 1 cucumber (sliced)
  • 1/4 cup green gram sprouts
  • 1/2 onion (thinly sliced)
  • 2 tbsp spring onions
  • Boiled fresh peanuts

Instructions:

  1. Toast Tofu:
    • Heat 1/2 tsp oil in a pan.
    • Add 200 gms cubed tofu with a pinch of salt and paprika powder.
    • Toss until all sides are slightly brown. Keep it aside.
  2. Prepare Dressing:
    • In a bowl, mix grated garlic, soya sauce, lemon juice, vinegar, and a few drops of honey.
    • Add sesame seeds and a tiny pinch of paprika. The dressing is ready.
  3. Assemble Salad:
    • In a large serving bowl, add chopped lettuce, julienne-cut carrot, shredded purple cabbage, sliced cucumber, green gram sprouts, thinly sliced onion, and spring onions.
    • Pour the prepared dressing over the salad and mix everything well.
  4. Final Touch:
    • Add boiled fresh peanuts and toasted tofu on top.
    • Gently mix and serve the salad fresh.

Tofu Salad is a blend of freshness and nutrition, bringing together a colorful vegetables with the protein goodness of tofu, sprouts and peanuts. The zesty dressing adds a burst of flavor, making every bite a delightful experience.
