Bitter gourd potato fry recipe | Pavakkai urulai roast – How to make pavakkai/bitter gourd roast with step by step pics and video recipe.

This is my recipe of bitter gourd and potato fried with onions. I either chop it super fine which usually takes a lot of time. this is easy as well as tasty. I suggest cooking the dish in the lowest flame taking its own time to get roasted. cast iron pan would do good for any stir fry recipes. You can also use non-stick as an option.

To reduce the bitterness of the gourd, soak it in salt and lime water for 15-20 minutes before chopping. But the Bitterness has got its job to do in your body, so don’t try to take it away. Just by adding a lot of onions, jaggery, potatoes, You can simply subside the flavor.

Now, lets see how to make this bittergourd potato fry recipe with step by step pics

In a iron pan/kadai, heat coconut oil and crackle mustard seeds and urad dal.

When it pops up, add bitter gourd and potatoes. These two are cut lengthwise as you can see in the below pic. You can chop it to smaller pieces per your wish.

Add salt, crushed garlic and mix well.

Sprinkle little water, turmeric powder and mix again until well combined.

Now, lets cook the vegetables in medium heat for few minutes. It need not be completely cooked. Close and cook for about 5 minutes on medium heat.

After 5 minutes, open and mix once.

Further, add sliced onions, chilli powder.

The reason I don’t prefer adding onions at the very beginning is that since it is a slow stir fry, the onions will be overcooked and charred by the end. If added halfway, it will be perfectly cooked along with the vegetables.

Put the heat to the lowest possible and let it get fried. Stir in between. Fry until it reaches the right texture and is perfectly fried.

lastly, add melted jaggery water and mix once. while adding jaggery is optional, i recommend it to balance the bitterness and spiciness.

Ingredients

  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 2 cups bittergourd chopped or cut lengthwise
  • 1 large potato chopped or cut lengthwise
  • 3/4 tsp salt
  • 5 cloves garlic crushed
  • 1/2 tsp turmeric powder
  • 1 large onion thinly sliced
  • 1 tsp chilli powder
  • 1 tsp jaggery water

Instructions

  • Heat oil and crackle mustard seeds and urad dal.
  • when it pops, add bittergourd, potatoes, garlic, salt and turmeric powder. Mix well.
  • sprinkle little water, close cook for 5 minutes.
  • open and add sliced onions, chilli powder and mix well.
  • fry in simmer until roasted. keep stirring in between.
  • lastly, add jaggery water and give it a mix.
  • serve hot with rice and curry.
