I’ve always loved soups that are light, soothing, and super easy to whip up, and this BOTTLE GOURD SOUP (LAUKI SOUP) quickly became a staple in my kitchen. Honestly, it’s one of those recipes I turn to when I want something cozy without feeling heavy afterward.

The first time I made this soup, I was craving a light dinner after a long day. I just grabbed a fresh lauki, added a few simple ingredients, and in no time had a bowl of warm, comforting soup. My family loved it, and now it’s a go-to for evenings when we want something healthy and satisfying.

Health Benefits
This soup isn’t just tasty; it’s really good for you too. Bottle gourd is packed with water and fiber, which helps with hydration and digestion. The moong dal adds a gentle protein boost, ginger and garlic are great for immunity and digestion, and the coriander and mint give it freshness plus some extra digestive benefits. It’s light, filling, and perfect if you’re trying to watch your weight or just eat healthier.

Let’s Talk About Ingredients

  • Bottle Gourd (Lauki) – Always pick a tender, light green lauki. It blends into a silky smooth soup and tastes mild and fresh. If you can’t get lauki, zucchini or ash gourd works too.
  • Moong Dal – Gives a little thickness and protein to the soup. You can skip it if you want a super light, clear soup.
  • Ginger & Garlic – Adds that comforting warmth and punch. Fresh ginger and garlic make a big difference in flavor.
  • Coriander Stems & Mint – Don’t toss the stems! They’re packed with flavor and add a fresh note to the soup. Mint is optional, but I love the hint of freshness it brings.
  • Spices (Cumin & Peppercorns) – Just a little touch for aroma and taste, nothing overpowering.
