PAAL POLI -Poli soaked in Flavoured Milk

Poli is one among the road side snack which i love to have. Sweet Poli,Masala Poli and coconut Poli. Hot ones toasted with ghee is simply finger licking.
This one is my first try and it did came out really well. I ve had the paal kozhukattai but never this one until i cooked myself. A sudden idea of making a simple sweet out of things in my kitchen.

Ok, coming to the point, when making polis for this paal poli recipe,there are two thoughts whether poli has to be crispy or not. When crispy few say it crumbles when soaked. When not crispy it becomes rubbery when soaked. Here my suggestion is to make the polis crispy but without turning its color.

Adding dry fruits is of your choice. I ve added cashew,Almonds,Pista and walnuts.
I ve tried putting in roasted pumpkin seeds too and it was really flavourful.

Adding vanilla essence is optional. Even if we are going to add only a drop is suggested as it should not disturb the pure taste of dry fruits.

Ingredients
Maida 1 cup
Ghee
Milk 1 litre
Cardomom powder a pinch
Vanilla essence a drop
Dry fruits (Cashew,Almond,Pista,Walnuts)
Pumpkin seeds 1 tsp
Sugar 1 cup
Salt
Saffron strands for garnishing

Paal Poli Method:

For the dough:
Prepare the dough with maida ,salt, ghee and water. Make it into smooth soft dough and keep it aside

For the milk:
1. Grate all the dry fruits and keep it ready

2. Powder the cardomom
3. Boil milk and when it is boiled,put it in simmer and add sugar, cardomom, vanilla essence and dry fruits grated. Mix well and cook in simmer until milk starts condensing.

It may take 15 min. Pour the prepared milk into a large vessel wide enough to soak the polis.

To make Poli:
Take the dough prepared and make small balls out of it. Make puris out of it and deep fry in oil. Smaller the puris,easier to eat.

Let it soak for a couple of hours. Refrigerate if u like to have it chill. Serve the poli with milk.
