⭐Crispy corn recipe
⦁ Water – 3 cups
⦁ salt to taste
⦁ Corn – 1 cup
⦁ Corn flour – 3 tbsp
⦁ Maida – 2 tbsp
⦁ Rice Flour – 1 tbsp
⦁ Salt to taste
⦁ Turmeric powder – a pinch
⦁ Oil for deep frying
⦁ Oil – 1 tbsp (for sauteing)
⦁ onion – 1/2 chopped
⦁ Green chilli – 1 chopped
⦁ Garlic – 2 tbsp, chopped
⦁ Coriander leaves – 1 tsp chopped
⦁ Chaat masala – 1/4 tsp
⦁ Chilli powder – 1/2 tsp
⦁ pepper powder – 1/2 tsp
⦁ salt a pinch
⦁ lemon – 1 squeeze
⦁ Boil 3 cups water and add salt to taste.
⦁ When it comes to a boil, add corn and let it cook until soft.
⦁ Strain the corn and rinse it with cold water.
⦁ Take it in a bowl and add cornflour, Maida, Rice flour, salt, turmeric powder and mix well first without adding water.
⦁ Now sprinkle little water and mix it well.
⦁ Now add cornflour a little and toss it together until all the corn is well coated.
⦁ Put it on a strainer and shake it to remove the extra flour.
⦁ Heat oil and deep fry the corn until crisp.
⦁ Take it out to a paper towel.
⦁ In another pan, Heat 1 tbsp oil.
⦁ Once the oil is heated, add together onions, green chilli, garlic and coriander leaves and quickly fry for half a minute.
⦁ Further, add chaat masala, chilli powder, pepper powder and salt a pinch.
⦁ Mix together and add the fried corn
⦁ Lastly, add a lemon squeeze, Give it one last mix and serve it hot and fresh for the best crispy corn.

⦁ Baby Potatoes- 15 nos
⦁ Corn flour – 1/2 cup
⦁ Maida – 1/2 cup
⦁ Herbs – 1 tsp
⦁ Papriks/kashmiri red chilli powder – 1 tsp
⦁ salt – 1 tsp
►►For mayo sauce
⦁ Mayo – 1 cup
⦁ Chilli flakes – 1 tsp
⦁ oregano – 1 tsp
⦁ onion powder – 1 tsp
⦁ garlic powder – 1 tsp
⦁ salt – to taste
⦁ pepper powder – 1 tsp
⦁ Red chilli flakes – 1 tsp
⦁ milk – 3-4 tbsp
⦁ chopped onions.
⦁ chopped coriander leaves
⦁ paprika powder
⦁ Pressure cook the baby potatoes for 3 whistles.
⦁ Potatoes have to be cooked and firm
⦁ Drain the water and take it on a wide plate
⦁ Press the potatoes gently to flatten it. keep it aside until use
⦁ In another bowl, take corn flour, maida, herbs, kashmiri red chilli powder, salt and mix well.
⦁ add water and mix well until thick consistency.
⦁ heat oil for deep frying. Dip the flattened potatoes in batter and deep fry until crisp.
⦁ Turn sides and cook until crisp on both sides.
⦁ For the cajun spiced mayo sauce, mix together chilli flakes, oregano, onion powder, garlic powder, salt, pepper powder, milk and mayo together until creamy.
⦁ Arrange the fried potatoes in a plate and spoon the cajun mayo sauce on top of it.
⦁ Garnish with chopped onions, paprika powder and coriander leaves.
