Beans thoran ~ Five reasons why you should eat Beans

Beans thoran or Beans and coconut stir fry is common accompaniment for rice. Beans is steam cooked and mixed with grated coconut with very little spices.

Five reasons you should eat Beans:

  1. Fibre. That makes you full and the fibre does not breakdown easily and is best source to meet your fibre goal.
  2. Beans is said to have Vitamin A – Anti-ageing properties. Look out to make more recipes to keep yourselves young 🙂
  3. Beans helps in boosting immunity and making our body stronger. It is rich in chlorophyll and reduces the risk of cancer. That is why it is advisable to always have steamed beans along with your grilled foods.
  4. It has folic acid which helps during preconception (improving fertility) in women and during pregnancy
  5. Beans is rich in antioxidants called flavanoid which helps prevent cardio vascular problems and risks.

  • Grind coconut, green chilli and cumin seeds to a coarse paste without adding water.
  • splutter mustard seeds
  • Put in some curry leaves
  • Then goes in washed and finely chopped beans
  • Add salt
  • Add very little water and close and cook in simmer until beans are done.
  • Open and add the coconut – green chilli -cumin paste.
  • Mix well and let it cook until well combined and all water gets evaporated.

Ingredients

  • 1/2 cup grated coconut
  • 2 green chillies
  • 1/4 tsp cumin seeds
  • 1/8 tsp mustard seeds
  • 1 spring curry leaves
  • 2 cups chopped beans

Instructions

  • Grind coconut, green chilli and cumin seeds to a coarse paste without adding water.
