Ingredients

to grind

  • 1/4 cup coconut
  • 2 no shallots
  • 1 no garlic optional
  • 1 tsp cumin seeds
  • 1 no green chilli
  • 1 dry red chilli

for making thoran

  • 1.5 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 spring curry leaves
  • 2 medium sized beetroot chopped finely
  • 1/8 tsp turmeric powder
  • salt to taste

Instructions

  • grind together coconut, cumin, shallots, garlic, red chilli and green chilli together to a coarse paste without adding water
  • heat coconut oil in a pan and crackle mustard seeds, curry leaves and add chopped beetroot, turmeric powder, salt, water to get it cooked. mix well.
  • close and cook until beetroot is cooked. 
  • open and add the coconut mixture. mix well and fry until all the moisture leaves and it gets dried. 
  • switch off and serve with rice and curry. 

grind coconut, cumin seeds, shallots, garlic, green chilli, red chilli to a coarse paste.

heat oil, crackle mustard seeds, curry leaves and chopped beetroot. Chop beetroot very finely or you can also grate them and add. I use preethi turbo chop for chopping my vegetables.

further, add turmeric powder, salt and mix well.

add water, close and cook until beetroot is cooked.

open, mix well until water evaporates. Add the coconut mixture to it and fry along with it until raw smell of coconut and garlic goes off.

once the raw smell goes off and it is dry, switch off.

serve fresh with rice and curry.
