Am generally a sambar addict. decoding this recipe was a bit tough task though there were lot of versions available online. I tried almost 3-4 popular Annapoorna sambar recipes myself and was not satisfied. either the colour was missing or the sweetness. sometimes the flavour itself had something missing.

Since i loved it like anything, I wanted to try it again and again and after 4-5 trials I got it almost perfect. I will not say its 100% as still i find something missing. may be that they have some special ingredient as their trademark secret recipe. 🙂 but am happy with the version i conceived, am almost there.

Coimbatore Annapoorna Hotel Style Sambar Recipe

Ingredients

  • 1 large onion chopped
  • 1/2 cup small onion sliced
  • 2 no tomatoes chopped
  • 15-18 cut piece drumstick
  • salt to taste
  • 1/4 tsp turmeric powder

to roast and grind

  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 3 tbsp coriander seeds
  • 1 tbsp chana dal
  • 1 tbsp urad dal
  • 1 piece asafoetida
  • 1/2 tsp peppercorns
  • 6-7 no red chillies
  • 1 sprig curry leaves
  • 3 tbsp coconut grated
  • 1.5 tbsp jaggery
  • 1 tsp tamarind

other ingredients

  • 1.5 cups tur dal cooked and mashed
  • salt to taste

tempering

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 sprig curry leaves

Instructions

  • add onions, small onions, tomatoes, salt, turmeric powder, drumstick and water. mix well, close and cook until drumstick is cooked. 
  • heat oil in a pan and roast cumin seeds, coriander seeds, chana dal, urad dal, asafoetida, peppercorns and fry for few seconds until slightly reddish
  • further add red chillies, curry leaves, grated coconut and fry till reddish. 
  • add jaggery and tamarind. let it cool and grind finely. 
  • fry the masala till it starts changing colour. 
  • add the masala, cooked and mashed tur dal, adjust salt and add water. 
  • mix well, close and let it boil for 10 minutes. 
  • heat oil for tempering. crackle mustard seeds, curry leaves and add the tempering to the sambar.

Lets see how to make this Annapoorna sambar, firstly lets cook the vegetables. 

  1. Add onions and tomatoes

    Add the chopped Big onions, sliced small onions and finely chopped tomatoes to a thick bottomed pan or vessel. Coimbatore Annapoorna Hotel Style Sambar Recipe

  2. add the vegetable and season it

    to this, add cut drumstick pieces, salt, turmeric powder and water enough for the vegetables to get cooked. Coimbatore Annapoorna Hotel Style Sambar Recipe

  3. cook the vegetables

  4. Prepare the sambar masala – add ingredients

    heat oil in a pan and add cumin seeds, coriander seeds, chana dal and urad dal to it. Coimbatore Annapoorna Hotel Style Sambar Recipe

  5. Prepare the sambar masala – add ingredients

    drop in a piece of asafoetida. if using powder, add a large pinch of it. also add peppercorns. Coimbatore Annapoorna Hotel Style Sambar Recipe

  6. roast the spices

    roast the spices in medium heat until it gets slightly reddish. need not fry for more than few seconds. it turns to slightly reddish stage quickly. Coimbatore Annapoorna Hotel Style Sambar Recipe

  7. add few more ingredients

    further add red chillies, curry leaves and grated coconut to the above fried spices.

  8. roast the coconut mix

    this is very important step and it has to be done with patience. let the heat be in medium and start roasting until it gets golden reddish in colour. take care not to burn it. colour of the sambar is in this masala roasting. 

  9. add jaggery and tamarind

    lastly, put off and add jaggery and tamarind. tamarind is optional. just a small piece of it will do. jaggery is important in this recipe. mix well until it is well blended. 

  10. roast the ground sambar masala

    cool the blend the roasted spices until smooth and then take it again in the same pan.fry until it starts changing colour. 

  11. add sambar masala and dal to cooked vegetables

    open and check if the drumsticks are cooked. do not pressure cook, as drumsticks will break. add the fried sambar masala and cooked and mashed tur dal. 

  12. mix and season the sambar

    mix well and adjust salt. add water to make it medium thick . approximately 1.5 cups water is added. 

  13. boil again for 10 minutes

    mix well and boil again for 10-15 minutes until raw smell goes off. you can also open and let it boil. I prefer closing as to retain the consistency. 

  14. prepare the tempering

    heat oil and crackle mustard seeds and curry leaves. put off. by this time, curry leaves would turn crisp. 

  15. add the tempering

    when the sambar is boiling, open and add the tempering to the sambar. 

  16. mix and serve

    mix well. serve it piping hot for best taste. 

  17. dunk idlis for sambar idli

    take two idlis in a plate and pour the piping hot sambar on top until it sinks in it. wait for 2-3 minutes for idlis to soak in sambar. enjoy the tastiest sambar idlis.
