Nungu Payasam Recipe

  • 1 cup palm fruit crushed
  • 2 cups milk boiled and chilled
  • 1/4 cup sugar
  • 1 tbsp condensed milk
  • 1 pinch cardamom powder
  • 1 pinch saffron threads
  • 2 tbsp almonds crushed coarsely


  • add palm fruit, milk, sugar, condensed milk to a bowl and stir well until sugar dissolves completely.
  • lastly add cardamom powder, saffron threads and crushed almonds. mix well and serve chilled.

firstly, lets roughly chop or muddle the palm fruit or ice apple until it is almost watery. need not grind them instead just mash it with your hands or pestle or masher. take it in a mixing bowl. one important thing to note here is choose only tender pieces for payasam. if the pieces are not tender, it may be hard in that case you can grind them. I used very very tender nungu which easily got mashed with hands.

add milk to it. boil the milk, chill it in refrigerate and add approximately 2 cups of milk to it.

Add 1/4 cup sugar. you can always adjust sugar according to your taste. we are adding condensed milk as well so adjust sugar according to your taste.

further, add condensed milk and stir very well until all the sugar is dissolved and condensed milk gets mixed well.

once the sugar is dissolved completely, add cardamom powder, saffron threads and mix well.

lastly, chop the almonds/badam or crush it as like i did to make it coarse powder and add it to the bowl. you can also pista or any dry fruit of your choice.

mix briskly for the last time and serve chilled.
