soak the biryani rice in water for 15 minutes. meanwhile lets prepare the paste for the biryani. grind together onions, green chillies, ginger, garlic to a fine paste.

melt ghee in a thick bottomed pan. Add together oil. When it is heated up, add cinnamon, stone flower, cloves and cardamom.

add chopped onions and fry till brown.

when the oniosn are brown, add the prepared green paste, finely chopped mint leaves, finely chopped coriander leaves and mix well. fry for a minute until raw smell goes off.

add sliced mushrooms, turmeric powder, chilli powder, salt and mix well.

add curd, 1.5 cups water. close and cook for 5-10 minutes or until mushrooms are soft.

open and find the mushrooms soft and cooked. meanwhile heat a piece of coal in stove.

put the flame in simmer and place a cup and hot coal in it. pour in few drops of ghee on top and when the fumes come out, immediately close the pan.

after the fumes settle (2-3 minutes), open and remove the cup carefully. drain and add the soaked rice, mix well and add ghee.

close and cook for 5 minutes on high flame and 10 minutes on low flame. open and gently fluff it up
