carrot mezhukkupuratti recipe is a very common recipe that is found in Kerala. Though there are a lot of variations in making this recipe, this one is practiced in our home. Also found in some of the kerala sadya recipes.
crushing small onions gives the dish the unique mezhukkupuratti flavor. Garlic is not added as carrots are not found to cause gas trouble. But usually, in mezhukku, small onions, red chillies, and garlic are crushed together and added.

Easy carrot stir fry recipe
- 1 tsp coconut oil
- 1 tsp mustard seeds
- 5-6 no small onions crushed
- 2 no red chillies broken
- 1 sprig curry leaves
- 2 cups carrots chopped
- 1/2 tsp salt
- 1/8 tsp turmeric powder
- heat oil in a kadai and crackle mustard seeds.
- stir in crushed onions, red chillies, curry leaves until onions are soft.
- further add chopped carrots, salt, turmeric powder and stir for a minute.
- add little water and close cook until it turns soft.
- open, stir once and serve hot.

Kerala style carrot stir fry
In a kadai, heat oil and crackle mustard seeds.
When mustard seeds crackle, add in crushed small onions and broken red chillies.
Further add broken curry leaves and fry everything until it turns soft.
prepare and Cut the carrots as per your likings. Add the carrots with salt required.
sprinkle water and add turmeric powder. mix well.
close and cook until the carrots are soft. We would prefer a slightest crunch in it rather than a mashy carrot.
Check the consistency of the carrot and stir once before serving.
serve it hot and enjoy with rice and curry.
