Nethili meen varuval recipe | Anchovy fish fry
Nethili meen varuval recipe | Anchovy fish fry with step by step photos and video recipe. Simple fish fry where the small nethili/netholi/kozhuva meen/anchovy fish is marinated in masala and deep-fried in oil until crisp.
This is best tasted when had hot with onions. While Cleaning this fish, I usually pull out the bones from inside so that the fish can be had as such once fried and need not worry about the bones.
This is one important step to take care while cleaning. Most of the people don’t do that and they eat even the bones but while giving for kids, this is very very difficult to remove off those little bones. Instead, removing the bones and the tiny fin while cleaning is a better option.

Wash and clean the anchovy fish. drain the water and take it in a bowl. Add all the ingredients needed for marination: turmeric powder, pepper powder, chilli powder, ginger garlic paste, curry leaves, salt, cornflour, rice flour, salt, and Kashmiri chilli powder.
Mix everything together and let it marinate for at least 1 hour. Add more rice flour/corn flour if you find it less coated. You can also add an egg to it.
Heat oil and drop the marinated fish pieces one by one and deep fry them until crisp and brown. Test by dropping one or two fish, then correct the batter with extra flour, spices/salt.
