Quick Madras Chicken curry recipe is one of the popular chicken curry recipe with the quick and easy method of making spicy and semi dry-almost dry chicken curry.Chicken in its any form with Indian masalas gives a special taste. Especially this Madras chicken curry is spicy and can be made in just 30 minutes to suit rice or even snack.

We make chicken often at home and a week without it is like so boring. We experiment different recipes each week and i keep posting them all in my website after my DH approval. Of course, the rejected ones go another round of sampling again. 🙂

Quick Madras Chicken curry recipe – pictorial directions

Get all your ingredients ready

Heat oil, drop in green chilli, red chillies and curry leaves. saute for half a minute After half a minute, goes in ginger garlic paste and chopped onionsFry for a minute until translucentAdd chopped tomatoes and saute againclose and cook for a couple of minutes in medium flame until tomatoes are well cooked and mushyAdd all the spice powders. Chilli, turmeric, coriander, garam masala, cumin powder and pepper powder.

Fry until masalas are mixed and oil leaves outNow goes in chicken pieces and salt.

Mix well, close and cook in simmer without adding any water for 20-25 minutes.

Ingredients

  • 1 no green chilli
  • 2 no red chilli
  • 1 spring curry leaves
  • 2 tbsp ginger garlic paste
  • 2 medium onions chopped
  • 1 large tomato chopped
  • 1/8 tsp pepper powder
  • 1/8 tsp turmeric powder
  • 3/4 tsp chilli powder
  • 1/2 tsp cumin powder
  • 1 tsp garam masala
  • 1 tbsp coriander powder
  • 1/2 kg chicken
  • salt required

seasoning

  • 3-4 cloves garlic crushed
  • 1 spring curry leaves

Instructions

  • Heat oil, drop in green chilli, red chillies and curry leaves. saute for half a minute Add  ginger garlic paste and chopped onions, Fry for a minute until translucent
  • Add chopped tomatoes and saute again. close and cook for a couple of minutes in medium flame until tomatoes are well cooked and mushy
  • Add all the spice powders. Fry until masalas are mixed and oil leaves out

    Mix well, close and cook in simmer without adding any water for 20-25 minutes.
