If you’ve ever wandered through the bustling lanes of South India in the morning, you’d know how much people love their eggs. From a simple half boil at a roadside tea stall to the fluffy masala omelets sold near bus stands, eggs are everywhere and always comforting.
I grew up watching these quick egg recipes being whipped up in minutes, and it’s something I still crave today. Simple, spicy, full of flavor, and always budget friendly. Eggs are one dish you can never get bored of.
Not just tasty, eggs are packed with protein and keep you full for long hours. They make a great start to the day, support muscle strength, and are super versatile to cook with.
Let’s Talk About Ingredients
Coriander leaves – Fresh and aromatic, they brighten up every dish.
Eggs – The hero ingredient! Fresh farm eggs taste the best. You can replace with duck eggs for a richer flavor. They’re rich in protein and good fats.
Onions – Add crunch and sweetness. Shallots/Small onions can be used for stronger flavor.
Tomatoes – Give tanginess and balance to the spice. Skip them if you like it plain.
Green chillies & spices – Essential for that street-style kick. Adjust to your spice level.
