Flax seed chutney powder Flax seed chutney powder | flaxseeds idli podi recipe | Spicy idly chutney powder using flax seeds with step by step photos and video recipe. this recipe is simple, healthy and easy to prepare using chana dal, urad dal as a main ingredient along with flax seeds. 

We use only homemade idli podi and make it in batches to use for couple of months. so every 2 months once, we prepare a different variety and use it. mostly, we prefer urad dal idli podi. This time as i had a lot of flaxseeds at home which i though t should be included in our diet somehow, i thought of making idli podi with flaxseeds.

this is my own recipe and it turned out to be awesome. little spicy and we love it that way. if you do not want it spicy, then reduce the quantity of red chillies.

Main taste of the idli podi is in the quantity and frying method. we will have to fry each ingredient separately until it reaches to the desired state and then take it in a plate. firstly, we will roast the flaxseeds. take 1/2 cup flaxseeds and fry in hot pan on high flame just until it starts popping. it jumps out all over. immediately take out the pan from stove and transfer it to a plate.

in the same pan, add chana dal (kadalai paruppu) and dry roast in medium flame until it turns reddish. transfer it to the same plate along with flax seeds.

next, dry roast urad dal with skin. you can also use whole urad dal without skin. since the skin is also nutritious and is not taken in any form. I always add it with skin in idli podis. fry until it is brown and transfer to the same plate.

further dry roast white sesame seeds in same pan until it pops and starts turning color. transfer immediately to the same plate.

in the same pan, add red chillies, curry leaves, cumin seeds and peppercorns. roast until red chillies puffs and curry leaves are roasted. transfer to a plate.

dry roast rice until puffy. I have used brown rice. you can also use normal white sonamasoori rice or even raw rice. fry until it puffs and add asafoetida powder. fry for 2-3 seconds and immediately transfer to the plate.

while frying garlic, few drops of oil is added. just few drops so that it gets roasted well. transfer it to the plate as well. If you dont fry garlic well, powder will taste raw garlic smell which most of them dont like. but burnt garlic gives an amazing flavor to the powder.

spread it over a newspaper and let it cool completely before grinding. transfer to blender, add salt to taste and blend to a coarse powder.Flax seed chutney powder

blend it to coarse paste as like in the below pic. mine is little coarser. you can also make it fine if you like but generally idli powders are made coarser. serve with ghee/sesame oil.

Ingredients

  • 1/2 cup flaxseeds
  • 1 cup chana dal
  • 1 cup urad dal (with skin)
  • 2 tbsp sesame seeds
  • 2 tbsp brown rice
  • 1 cup red chilli loosely packed
  • 2 spring curry leaves
  • 3/4 tbsp cumin seeds
  • 1/2 tbsp peppercorns
  • 2 pinch asafoetida
  • 4 cloves garlic
  • salt to taste

Instructions

  • dry roast flaxseeds until it pops and take it in a plate. in same pan, roast chana dal till brown and take it in the same plate. 
  • in same pan, dry roast urad dal, sesame seeds, brown rice one at a time till brown and take it in a plate. 
  • further add red chillies, curry leaves, cumin seeds and peppercorns and fry till chillies puff and curry leaves are crisp. take it in the plate. 
  • cool completely, add asafoetida, salt and grind to a coarse powder. 
  • cool and store it in air tight container. use as and when needed.
